Zucchini Cake

Today, I made some zucchini cake and I thought I would share the recipe with you. This is a recipe from my mom and it is so good! Dad has a garden this year and he had given me some huge zucchini. I remembered mom used to make zucchini cake and bread when we were little whenever she had an abundance of zucchini. I only used about 1/4 of the zucchini for the cake so I went ahead and shredded the rest and put it in the freezer in freezer bags in 3 cup portions. That way, I will have it whenever I want to make another cake.

Zucchini Cake

3 eggs beaten
1 cup vegetable oil (I used 1/2 c. oil and 1/2 c. applesauce)
2 cups sugar
2 tsps. vanilla
2 cups all-purpose flour
3 tsps. cinnamon
2 tsps. soda
2 tsps. salt
1/2 tsp. baking powder
3 cups grated zucchini (I use my food processor)
Combine eggs, oil, sugar, and vanilla; mix well. Combine dry ingredients; add to oil mixture, mixing well. Stir in grated zucchini. Bake in a greased bundt or tube pan at 350 for 55-60 min. Let cool 20 min. before removing from pan. Glaze and Enjoy!!
Glaze:
1/2 c. powdered sugar
2 t. milk
Blend until smooth
